Luna Azul | Black Honey Colombian Coffee Grown By Andrés Cardona
Summary
Luna Azul is a black honey Colombian coffee grown and processed by Andrés Cardona at Finca La Ilusión, his eight-hectare farm in Santa Bárbara, Antioquia, at 1,522 masl. Varieties are Castillo and Colombia. For the black honey process, cherries ferment a full week in open tanks, then are depulped without water so the mucilage stays on the bean, and dried on raised beds for one to three weeks down to 11% moisture. Expected profile: blueberry, dark chocolate, syrupy body.
