Summary
Colombian specialty coffee from Finca El Placer in Quindio, produced by fourth-generation coffee grower Sebastian Ramirez. Pink Bourbon variety grown at 1500-1744 meters above sea level. Processed as a co-fermentation with blue grapes and red wine yeast: selectively hand-harvested cherries undergo a 120-hour anaerobic fermentation with wine yeast at 18°C, followed by carbonic maceration with dehydrated blue grapes and fruit glucose, then controlled drying at 40°C for about 5 days and a 15-day stabilization period. Flavour notes include blue grape, blueberry, and honey.
