Summary
Colombian specialty coffee from the Quindío region, produced by Sebastian Ramirez at Finca El Placer, a fourth-generation family farm at 1500–1744 meters above sea level. The lot is made up of Pink Bourbon and Caturra varieties. It undergoes a multi-stage anaerobic fermentation: 120 hours whole-cherry fermentation with wine yeast, followed by 72 hours with dehydrated melon and CO2, then slow drying at 40°C and 15 days of stabilization. Tasting notes include floral aromatics, honey, and melon.
