Summary
Finca Las Palmas is a specialty coffee from the Huila region of Colombia, produced by Abelardo Alvear on a two-hectare farm. The coffee is of the Bourbon Aji variety and undergoes an anaerobic washed process: ripe cherries are anaerobically fermented for approximately 40 hours, depulped, then anaerobically fermented again for 80 hours, washed, and patio dried for three weeks. The flavor profile features notes of elderberry, raspberry, and winey characteristics with a clean, fruity profile.
