Finca El Tabor
Summary
Finca El Tabor is a washed Sidra from Huila, Colombia, produced by Cesar Dario, son of Fabiola Ortega, whose family has farmed the fifteen-hectare property for over thirty years, with five hectares in coffee. Ripe cherries were depulped and fermented for 48 hours, fully washed through concrete channels, then dried in parabolic dryers for 16-22 days. The cup shows red winey flavors of grape and cherry with a touch of process character.
