Summary
Semi-washed Pink Bourbon from Finca Buena Vista in Huila, Colombia, run by husband and wife Edgar Motta and Susana Mences. Cherries were picked based on density, depulped, and processed using a semi-washed protocol preserving part of the mucilage, then dried on raised beds in a single layer for 16-22 days. Tasting notes of berries and citrus with a sparkling acidity and a slight savory quality. Scored 87.25.
