
El Ajial
Summary
El Ajial is a washed Caturra coffee from the Nariño region of Colombia, produced by Luis Alfredo Lopez on a three-hectare farm inherited from his father. The farm dedicates one hectare to specialty coffee, with the rest used for avocados, corn, beans, peas, and livestock. Only ripe cherries were collected, sorted by density, depulped, and fermented in tanks for 24 hours, then washed twice and dried under shaded canopies for 15-20 days. Flavour notes include peach, cranberry, and orange.
