Competition series coffee from Colombia, Huila region, produced by Jhoan Vergara at Finca Las Flores. The coffee is of the Chiroso variety, grown at 1750 meters above sea level. It undergoes a thermal shock natural process, where the cherries are immersed in cold water, slowly heated, then rapidly cooled, allowing the cellular compounds to open and capture flavors. The cup is characterized by explosive fruitiness, with notes of yellow fruit, particularly peach, and floral lavender on the nose. On the palate, yellow fruit notes are confirmed alongside red fruit, ranging from hibiscus to berries, with medium-high body and sweetness, and unique acidity and aromatic complexity.
