Summary
A specialty coffee from the Huila region of Colombia, produced by Edier Perdomo at Finca Los Pinos. The Pink Bourbon variety, a cross between Red and Yellow Bourbon, thrives in the volcanic soil and high altitude. The beans undergo a 24-hour pre-fermentation in cherry, followed by a 36-hour anaerobic fermentation in bags with mucilage, then sun-dried on raised beds for 15 days. The cup is complex with light acidity and great sweetness, featuring notes of maple syrup, green apple, tangerine, and a floral touch. Suitable for both espresso and filter brewing.
