
Colombia Finca Guacanas
Summary
A specialty coffee from Finca Guacanas, produced by third-generation farmer Andres Guaca in the Acevedo region of Huila, Colombia. The coffee is of the Pink Bourbon variety, grown at 1550 meters above sea level. It undergoes a natural carbonic maceration process: after harvest, the cherries are placed in sealed steel tanks without oxygen for 72 hours, then dried on African beds for about 25 days. The cup is highly complex and intense, with notes of cherry liqueur and dark chocolate, accompanied by spicy notes reminiscent of curry and cumin, and a lively acidity.
