This lot comes from Colombia, cultivated and processed by Sebastian Ramirez of Finca El Placer. Sebastian is a fourth-generation coffee producer. After 14 years of experience, he created the El Placer Farms Project, which started with the family farm and now includes small coffee farms in Quindio and Huila. The project focuses on post-harvest specialization and research, developing innovative processing techniques with the introduction of yeasts and bacteria in fermentations. The Sidra botanical variety has an extremely complex profile. After harvest, the coffee cherries are placed in fermentation tanks with CO2 injection to control the environment for 24 hours. Then they are depulped, washed, and placed again in fermentation tanks for another 24 hours, using Lixiviado (Mosto) obtained from the degradation of the coffee cherries themselves. Finally, they are rinsed and dried on African beds. In the cup, it is a coffee of high complexity and elegance, with spicy notes of pepper and anise, yellow fruit, lavender, and lively florals like hibiscus.
