Summary
A light roast single-origin coffee from Costa Rica produced by Diego Robelo at the Aquiares estate. Processed as anaerobic natural: freshly harvested cherries are floated and rinsed, then fermented in oxygen-free barrels for 46 hours before being dried on a ceramic floor and finished on raised beds in a climate-controlled greenhouse. Variety is Centroamericano. Tasting notes of cooked strawberry, cacao nibs and cognac.
