Summary

Specialty arabica from Chiapas, Mexico, produced by FEDESI, a federation of six cooperatives representing over 2,990 smallholder farmers in the Sierra Madre region. Grown at 1,200-1,700 meters from Bourbon, Marsellesa, Sarchimor and Typica varieties. Fully washed: cherries are hand-picked, floated, pulped, fermented 10-16 hours, washed and dried on cement terraces for 5-10 days. Decaffeinated using the Mountain Water Process. Roasted for espresso with notes of velvet, pear and caramel.
