Guatemalan specialty arabica from Finca Familia Mendez, grown at 1,700 m in Chichimes, San Pedro Necta, Huehuetenango. Produced by sisters Juana and Minga Mendez, fourth-generation coffee growers. Varieties Bourbon and Catuai, fully washed: selectively hand-picked ripe cherries, pulped, dry-fermented for 40 hours, washed and dried on patios for 7–9 days with hourly turning. Roasted for filter. Tasting notes of peach, pecan and caramel.
