El Indio, Colombia
Summary
A decaffeinated single origin from the Tolima department of Colombia, produced by 175 coffee-farming families in Planadas working with Cofinet's partner associations. Grown at 1500-2150 MASL from Caturra trees and processed as Natural, then decaffeinated using the Sugarcane EA (ethyl acetate) method, which preserves the coffee's sweetness and complexity. The cup is full and complex, with notes of Madagascar dark chocolate, honey and pineapple, a honeyed roundness and bright pineapple-like acidity. Roasted as an omni profile suitable for both espresso and filter.
