This lot from Davinson Toro, a young producer managing his family farm La Esmeralda in Acevedo, Huila, Colombia, combines Pink Bourbon and Gesha varieties. The coffee underwent a multi-stage washed process: whole coffee fruit submerged underwater in a sealed barrel for 24-30 hours, depulped, dry fermented for 12 hours, double washed, then dried slowly over two weeks. Expect a delicate, tea-forward cup with jasmine and orange blossom florals, fresh blueberry and mulberry fruit tones, and wildflower honey sweetness.
