Panama Geisha Savage
Summary
Panama Geisha Savage is a nano-lot Geisha from Iris Estate in Boquete, Panama, grown at 1,850–2,300 m in volcanic soils and produced by Jamison Savage. The lot is harvested from the estate's 'Green Tip' Geisha trees and processed via the Odyssey method: whole cherries are hermetically sealed in stainless steel tanks, flushed with nitrogen to exclude oxygen, and anaerobically macerated for 4–6 days before slow drying on shaded raised beds for up to 30 days. The cup is silky and tea-like with floral, violet and tropical fruit notes, blueberry, rose water, white peach and Meyer lemon, bright phosphoric acidity and a lingering jasmine finish.
