Srima9. Honey. Café De Tailandia
Summary
Srima9 is a Thai coffee from the mountains of Chiang Rai, grown by smallholder families in a protected forest community. Producer Joe & Mild work with CPDP (Coffee Petri Dish Plan), which buys cherries directly from local farmers at 20-30% above market price. Altitude ranges from 800 to 1,500 metres in a tropical forest climate with marked day-night temperature swings, favouring slow cherry maturation to around 22-23 °Brix. Varieties are Typica and Bourbon, unusual for Thailand. Cherries undergo 48-hour anaerobic fermentation followed by a Honey process and roughly 10 days of drying. Sensory profile: milk chocolate, cherries, red apple and citrus.
