The washed processing involves controlled fermentation with leachate and a thermal shock treatment using hot water at 65-70°C to stop fermentation at the right moment, followed by precise drying in controlled humidity conditions. The sensory profile features white flowers, lemongrass, plum compote, and ginger, offering a clean, precise, and elegant cup with balanced sweetness and acidity. Light roasted and recommended for filter brewing methods.
