Idido Espresso

Summary

Idido is a remote community in Ethiopia's Yirgacheffe region where local smallholder farmers deliver their cherry to the Idido washing station. This washed lot, harvested in January 2025, is balanced and sweet with notes of papaya, orange, lemon, black tea, and vanilla. Cherries are collected at peak ripeness, depulped, fermented underwater for 48-72 hours, rinsed, and dried on raised beds for 10-12 days.
