Single-origin Colombian coffee from Finca Las Brisas in Huila, grown at 1900 m by producer Jhon Wilmer. Varieties Castillo and Caturra. Cherries are hand-picked, sorted and washed, then fermented in sealed bags for 80 hours and dried on parabolic beds in a marquesina drying tent designed to control airflow. Cup score 88. Flavour profile leans tropical and winey with a funky character: pineapple and pomegranate meet raisin and tropical candy sweetness, with a fruity, lively finish.
