Summary
A single-origin coffee from Brazil's Minas Gerais region, produced at Fazenda Guariroba at 1100m altitude. The Pink Bourbon variety undergoes a double anaerobic fermentation process: first 48 hours of oxygen-free fermentation, then partial mucilage removal, followed by a second anaerobic phase of 48-100 hours with selected yeasts. It is slow-dried over 10-20 days. The flavour profile features lavender, grapefruit, and chamomile. Suitable for espresso preparation.
