Brazil – Guariroba Citrus
Summary
Single-origin Brazilian coffee from Fazenda Guariroba in Minas Gerais, grown at 1100 m. The Citrus variant undergoes a double anaerobic fermentation: cherries are harvested above 24° Brix, hydraulically selected, fermented in a sealed tank for 48 hours, depulped, then fermented a further 72 hours with a solution containing microorganisms from the first fermentation. Roasted for espresso, with notes of lemongrass, grapefruit and hazelnut.
