La Guaca, Bourbon Aji, Colombia - Filter Coffee
Summary
Single-origin Colombian filter coffee from Finca La Guaca in Pitalito, Huila, produced by José Herman Salazar and family. Made from the rare Bourbon Ají variety, which traces its roots to the Ethiopian landrace group. Cherries are selectively hand-picked, soaked, pulped without water and fermented for 36–50 hours in sealed tanks, then washed and dried for about 18 days under a roof or in a solar tent. The cup is clean and nuanced with notes of apple pie, star fruit and panela sweetness.
