Summary
A Colombian coffee from the Huila region, produced by Nestor Lasso at El Diviso farm. This experimental lot features the rare Ombligon variety, processed with a multi-stage fermentation including oxidation, anaerobic fermentation with recirculated cherry leachates, and a thermal shock. It offers a unique flavor profile of grape, lemongrass, and basil with a light, sparkling body. Roasted light and best enjoyed as filter coffee, also suitable for cold brew and espresso.
