Brazil Entre Nos
Summary
Brazil Entre Nos is a coffee from the Caparaó mountains, grown by young farmer Fabiano Pires Machado at 1100-1300 masl in collaboration with Slovenian sourcer Rok Fabjan. It combines the Catucai 24/137 and Red Catucai 785 varieties, fermented and dried separately then blended. A 192-hour self-induced anaerobic fermentation yields a vibrant, fruit-forward profile of guava, passion fruit and blackberry with a smooth caramel undertone, velvety body and bright malic acidity. Suited to pour-over or espresso.
