Colombia - Chapata
Summary
Colombia - Chapata is a specialty coffee from the Anserma region of Colombia, produced by Luis Miguel and the Anserma cooperative of over two thousand small-scale farmers. It is the Castillo variety, naturally processed with extended fermentation: whole cherries were fermented without oxygen in sealed barrels for 96 hours, then dried in a Nuna drying box at 35-40°C for 100-120 hours. Roasted for espresso, its profile is dominated by candied orange, star anise and cocoa notes, with a warm, approachable character and a rich fruitiness reminiscent of orange wine.
