Processing is natural anaerobic fermentation for 120 hours in sealed tanks, followed by slow drying on raised beds. It has a dense aromatic profile with notes of sour cherry, pineapple, and rum, offering a juicy-sweet and very clean cup with medium to high acidity, smooth texture, and a long, clear finish.
