Alo 74158 Sky Project Natural
Summary
Ethiopian coffee from Alo Village in Bensa, Sidama, produced by Tamiru Tadesse of Alo Coffee. Grown at 2450-2500 m as part of the Sky Project, a collaboration with Tri-Up Coffee exploring high-elevation cultivation. Variety 74158. Ripe cherries are handpicked, floated, then fermented in barrels with hot water for four days to a final pH of 3.8, before being dried whole in the shade and rested at least 45 days. Slow maturation at altitude yields sweetness, complexity and vibrant fruit expression.
