Kolumbia – El Paraíso
Summary
Single-origin Colombian coffee from Finca El Paraíso in Buesaco, Nariño, grown by José Ignacio Gómez, whose family has cultivated coffee since the late 20th century. The farm was among the first in the region to plant varieties such as Caturra, Geisha and Bourbon Rosa. This lot is Caturra, processed anaerobically: hand-picked ripe cherries are disinfected, floated to remove low-density beans, then fermented in sealed tanks with temperature, pH, Brix and CO2 monitored every 12 hours for 10 days. Drying is done in two stages — three days on raised beds, then mechanically at 45 °C for 24–36 hours to 10–11% moisture. Expect pineapple, blueberry and wheat beer notes, with complexity, sweetness and clarity. Roasted for espresso and filter.
