Summary
A Panama Geisha Natural coffee from Mil Cumbres, founded by Mario Fonseca in Paraiso, Volcan, on the slopes of the Baru Volcano. The lot was harvested at 1700-1900 meters, with cherries floated to remove under-ripes, pre-dried for 24 hours, then fermented in airtight tanks for 28 hours with nitrogen introduced every six hours, and dried in temperature- and humidity-controlled dark rooms for 25-30 days. Notes include floral, jasmine, sugar cane, rose, lemongrass, strawberry and honey. Available in 100g packs, roasted to order on set roast dates.
