Gerson Mora - Yellow Pacamara Natural
Summary
Single-origin Colombian coffee from Villa Pastora farm in Palestina, Huila, produced by Gerson Mora at 1680 MASL. The rare Yellow Pacamara variety ripens yellow rather than red. Whole cherries undergo 60 hours of initial oxidation, with the collected musto and saccharomyces cerevisiae yeast added back for 92 hours of anaerobic fermentation, followed by 16 days of solar drying. Heavily red-fruited in profile with a big, round body, acidity akin to cara cara oranges, hibiscus tea-like character, and a milk chocolate finish.
