The coffee is from the Pink Bourbon variety, grown on neighbouring farms near San Antonio at 1650-1700 masl. Processed using the washed method with extended fermentation in parchment, dried slowly in parabolic tents. Tasting notes include persimmon, red apple and blanched almonds, with medium acidity and body. The cooperative and Bailies have worked together since 2015.
