Finca Monteblanco is a family-run farm in the Huila region of Colombia, managed by Rodrigo Sanchez Valencia and his wife, located on volcanic rock at 1730 masl. This 100% Arabica coffee undergoes a two-stage co-fermentation with watermelon: a fermentation culture is built over 190 hours from starter culture, sugars and fruit components, then the harvested and sorted coffee is fermented for 150 hours in a closed container with the culture. The result is an expressive coffee with notes of citrus, bergamot, dried fruits, a subtle chocolate background and distinct watermelon.
