Summary
Finca Monteblanco is a family-run farm in the Huila region of Colombia, managed by Rodrigo Sanchez Valencia and his wife, situated on volcanic rock at 1730 meters above sea level. This 100% Arabica coffee undergoes a two-step co-fermentation: first a fermentation culture is built from a starter culture, sugars, and fruit components over 190 hours, then the cherries are fermented for 150 hours in a closed container with the culture, with cane sugar, dried citrus fruits, and coconut added. The resulting cup is expressive with notes of citrus, bergamot, dried fruits, a fine chocolate undertone, and watermelon.
