Summary

Guatemalan filter-roasted coffee from the Huehuetenango region, produced by second-generation farmer Pascual Jimenez at Finca Familia Jimenez in Buena Vista. The Bourbon variety beans are dry-fermented for 40 hours in a tank, washed in clean water, and separated by density in a grading channel, then dried for 8-10 days before resting in jute bags for about 3 months. Flavour profile features stone fruits, hazelnut, and milk chocolate.
