Ethiopia Shakiso Red Honey
Summary
Ethiopia Shakiso Red Honey is a single origin coffee from the Guji region of Ethiopia, formerly part of Yirgacheffe. The cherries are sourced from smallholder farmers who use traditional farming methods, often intercropping coffee with other food plants, and mostly practicing organic farming by default with little to no fertilizer or pesticide use. The coffee is processed using the Red Honey method (semi-dry), where 50-70% of the mucilage is left on the beans during processing, creating a bridge between natural and washed coffees and resulting in deeper, sweeter fruitiness. Flavor notes include honeydew melon, blood orange, and black tea. Grown at 1850-2100 meters above sea level.
