Produced by César Ledesma, this Pink Bourbon variety undergoes a semi-washed process involving two fermentations: a 48-hour fermentation in cherry with lactic inoculum, followed by a 36-hour fermentation after pulping with added water and leachate from the previous fermentation. The coffee is then sun-dried and finished in a convection dryer with a maximum temperature of 39°C. Tasting notes include cherry, vanilla, white chocolate, and strawberry.
