Black Diamond (natural), Costa Rica
Summary
A natural-processed coffee from Costa Rica's Central Valley, produced by Francisca Cubillo and Óscar Chacón of the Las Lajas micro-mill. The Chacón family has cultivated coffee since 1936 in the foothills of the Poás volcano. This Milenio variety lot, awarded the Black Diamond distinction, undergoes a complex natural process involving slow drying and rotation of cherries on patios in a greenhouse, enhancing fruit acidity and sweetness. Flavour notes include black grape, raspberry, melon, and papaya.
