Kigeri
Summary
A vibrant anoxic washed Red Bourbon lot from the Izuba washing station in Kayanza Province, northern Burundi. Izuba sits near a river by Kibira National Park, with coffee collected from the surrounding hills of Kigeri, Ryamukona and Mugoyi. The lot undergoes an anoxic 'water pillow' fermentation, a form of anaerobic fermentation in which sealed cherries are covered with water for 48-72 hours at a stabilised 25°C, then pulped, washed, graded and sun-dried on raised beds for 15-20 days. Layered sweetness with notes of red berries and kiwi fruit, plus a herbaceous undertone of sparkling elderflower. Best suited for filter brewing.
