Processed with anaerobic honey fermentation for 120 hours in sealed Ecotact bags, then dried on raised beds for 10-14 days. Cup profile features baked peach and pear with bittersweet cocoa, a thick opaque body, and a long finish of cacao nibs, with background notes of tobacco and baking spices, reflecting an unmistakable Indonesian character.
