Summary
El Alumbre de Tarrazu is a specialty coffee from Costa Rica's Tarrazu region, produced by Fernando Cordero on his 10-hectare family farm. The beans are of the Yellow Catuai variety, grown at 1700 masl in volcanic soil. The coffee undergoes a thermic fermentation process at the Cordillera del Fuego micro mill, where the mucilage is heated to around 70°C to caramelize sugars before a longer gentle fermentation. Flavour notes include caramelized pineapple, umami, black pepper, and prunes.
