Summary
This single origin coffee from Colombia's Nariño region, specifically the municipality of Chachagüí in the veredas of San Juan and Sánchez, is produced by smallholder farmers Jorge Luis Erazo Ascúntar, Isabel Cristina Revelo Canchala, and José Ernesto Burbano. Grown at 2000-2100 meters elevation on steep hillsides shaped by the Galeras volcano with mineral-rich volcanic soils, it features Castillo and Caturra varieties. The coffee is processed using the natural method with slow fermentation ranging from two to four days, followed by extended drying on patios and in parabolic dryers in the cool high-altitude climate. The cup profile is vibrant and layered with fruit and floral notes, clean and expressive aromatics. Light roasted.
