Bookkisa
Summary
This Ethiopian coffee from the Guji highlands is produced by Sookoo Coffee, founded by Ture Waji, working with smallholder farmers. The fully ripe cherries are pulped with a Penagos Eco-pulper, then fermented and soaked in water for 12 hours before drying on tables. The washed process highlights floral and spice notes, with a flavour profile of white flowers, pear, and cardamom. Grown at 2000-2150 masl, the coffee features Gibirinna 74110 and Serto 74112 varieties.
