Faver Ninco - Santa Maria, Huila, Colombia
Summary
Single-origin Colombian coffee from Finca Costa Rica, Faver Ninco's 10-hectare farm in Santa Maria, Huila. Grown at just over 2,000 masl, where cooler temperatures, limited sunlight and less regular rainfall produce sporadic flowering and nearly year-round picking; this first of three Pink Bourbon lots comes from the early and peak portions of the May to August main harvest. Washed processed, it presents layered flavors, brisk acidity and light florality, with notes of bright red fruit, herbal tea and honeyed sweetness.
