Bishan Wate Espresso - Ethiopia // Washed Heirloom
Summary
This Ethiopian coffee from the Guji region is produced by 50 smallholder farmers in collaboration with the Bishan Wate Washing Station. The heirloom varieties are processed using a special prep washed method, involving a 48-hour fermentation and drying on raised beds for about 21 days. The cup is layered and intense, with tasting notes of bergamot, candied orange, and hints of chamomile. It is very sweet and roasted for espresso.
