Mexico
Summary
A washed mixed varietal espresso coffee from Chiapas, southern Mexico, grown by multiple smallholder farmers around San Cristóbal de las Casas and processed together at a single drying station. The Sierra Madre mountains and the area's indigenous Tzotzil heritage shape this coffee, which is clean and bright yet creamy and nutty, with notes of creamy cashew, milk chocolate and crisp red apple. Best suited to espresso but also works well as Aeropress, cafetière or Moka Pot.
