Summary
Re-Glas Mad Monkey is a 100% Arabica espresso blend from Guatemala and Mexico. It is medium-strength with tasting notes of nougat, chocolate, and a light fruitiness. The coffee is slow-roasted in traditional cast iron drums for a full-bodied and stomach-friendly cup. Recommended for portafilter machines, stovetop makers, and fully automatic machines.

- 1.Take the portafilter out of the brew group and briefly rinse the group.
- 2.Place your clean and dry portafilter on a scale and tare it.
- 3.Grind the desired amount of coffee (dose) into your basket.
- 4.Distribute the coffee grounds evenly in the basket, using your finger or a distributor.
- 5.When tamping, apply pressure vertically to the coffee to ensure even compaction. Apply pressure only once to avoid channeling.
- 6.Remove any coffee residue from the rim of the basket.
- 7.Lock in the portafilter and start the shot immediately.
- 8.Stop at the desired yield.
- 9.Empty the portafilter, clean it, and rinse the group again before locking in.
Water temperature 90-96°C. General rule for portafilter machines.
