Rare Series Panama, Kotowa Farm-finca Silvia Marina
Summary
A rare Geisha lot from Finca Silvia Marina, a verdant estate in the cloud-kissed mountains of Boquete, Chiriquí, Panama, run by award-winning specialty coffee company Kotowa and its father-daughter duo Ricardo and Victoria Koyner. Kotowa means "mountain" in Ngäbere. Cherries were handpicked, fermented for 24 hours, washed, then dried on raised beds for eight days and statically for four. The cup is delicately complex with citrus, stonefruit and an aromatic chamomile finish, showing the sweetness of slow maturation at 1,950 MASL.
