Ayla Shantawene, Sidama Ethiopia
Summary
Ethiopian coffee from the Shantawene kebele in Bensa woreda, Sidama, grown by smallholders on 0.1–2 hectare plots at 1950 masl, shaded by false banana trees. Heirloom varieties, fully washed at the Ayla washing station: cherries sorted in water tanks, depulped, fermented for 100 hours, then dried on raised African beds under a parabolic shade net for 15 days.
